As it gets colder outside, I am getting hungrier. During cold days like these, I am usually craving for some traditional home-made food which would make me feel warm and satisfied. And because I love french cuisine so much, today I was cooking "Traditional French Onion Soup". Let´s get onto it.
TRADITIONAL FRENCH ONION SOUP
Preparation time: 1 hour
Serves: 4 persons
Ingredients:
150g soft butter
5 medium-size yellow onions
3 garlic cloves
a big glass of port wine or Valpolicella red wine
1l homemade chicken or beef broth
2 tablespoons of toasted flour (for nutty flavor)
if needed - some water
fresh thyme
salt, pepper
organic butter and olive oil
dash of organic honey
french baguette
some gruyere or Comte cheese
(I live in Austria and I used a "Bergkäse" which worked just fine!)
Procedure:
- First off, slice (already peeled) onions thinly and add them to a soup/stock pot (in this case I used cast iron soup pot).
- Add butter and olive oil. After, add smashed garlic cloves and thyme. Sweat off onions for about 25 minutes, stirring occasionally to prevent burning.
- Add a dash of honey to sweeten it up a bit. Season with salt and pepper. At this point add flour to thicken it up. Stir for 2 minutes. Add wine and cook for 5 minutes. Then add chicken broth.
- Let to cook for 15-20 minutes.
- Meanwhile, place layers of cheese onto sliced baguettes and bring under a grill to let the cheese to meltdown. Serve with a bowl of onion soup.
