Procedure:
For the perfect Savoiardi Easy made at home biscuits you will firstly need the best quality eggs possible. It is the secret to all great sponge cakes and biscuits. Eggs have to be fresh and very well whipped. Firstly: separate the egg whites from egg yolks. After that, whipp the whites in your KitchenAid machine with 150g of caster/granulated sugar, and add a little bit of salt. Meanwhile mix the 30 g of corn/potato starch with the 90 g of your 00 flour in another bowl. Very gently, add the egg yolks one by one to the whipped egg whites. (which you have whisked for at least 10 minutes in your KitchenAid machine). Then gradually add a mix of flour and starch. Mix up from top to the bottom, but very slowly. When its done, fill the sac-à-poche with your egg mixture and create large, elongated biscuits on a baking paper-lined baking tray. Finally, sprinkle the biscuits with sugar. Bake at 180 degrees for 20 minutes.
It is completely easy and simple to make these savoiardi biscuits at home by yourself.
