No idea what to prepare on Saturday so fast for dinner?
I have a tip! My Italian tomato puff pastry pie which is ready in no time! Let's prepare it!

ITALIAN TOMATO PUFF PASTRY PIE

Baking time: 20 min
Portions:       4

Ingredients:

300 g puff pastry/homemade made quiche pastry
250 g ricotta (or you can also use cream cheese instead)
1 large beef tomato + 1 ordinary tomato
Salt/pepper
Dried oregano
Dried thyme

Procedure:

  1. Preheat the oven to 200 degrees celsius. Cut the tomatoes into thinner wheels and set aside.
  2. Spread the leaf dough onto a large sheet.
    Season with Ricotta, season, add dried oregano and thyme or whatever herbs (spices you have got at your hand). Coat the pastry dough with your ricotta mixture.
  3. On the top, we put on the wheels of tomatoes. If needed, we can add a bit of salt. Now into the oven for 20 minutes.
  4. You can complement this light dinner with a glass of good Spumante such as Valdo Garda.
