No idea what to prepare on Saturday so fast for dinner?
I have a tip! My Italian tomato puff pastry pie which is ready in no time! Let's prepare it!
ITALIAN TOMATO PUFF PASTRY PIE

Portions: 4
Ingredients:
300 g puff pastry/homemade made quiche pastry
250 g ricotta (or you can also use cream cheese instead)
1 large beef tomato + 1 ordinary tomato
Salt/pepper
Dried oregano
Dried thyme
Procedure:
- Preheat the oven to 200 degrees celsius. Cut the tomatoes into thinner wheels and set aside.
- Spread the leaf dough onto a large sheet.
Season with Ricotta, season, add dried oregano and thyme or whatever herbs (spices you have got at your hand). Coat the pastry dough with your ricotta mixture. - On the top, we put on the wheels of tomatoes. If needed, we can add a bit of salt. Now into the oven for 20 minutes.
- You can complement this light dinner with a glass of good Spumante such as Valdo Garda.
