Everyone is getting ready for Christmas. At least this is what I can see all across the food blogger Instagram accounts 🙂 This cake/tart is not difficult to prepare and really matches the white snow atmosphere outside (if there is any at all!) Get ready for Christmas with me!

Chilling time:Â Â Â Â 3 hour
Serves:Â Â Â Â Â Â Â Â Â Â 10-12 persons
Ingredients:
160g soft butter
4 eggs
135g regular sugar /I used cane sugar/
1 sachet vanilla sugar
200g "universal" flour
1 teaspoon baking powder
2-3 lemons
1/2 sachet custard powder
150g plum jam
40g icing sugar
250 good quality! white chocolate
250g mascarpone
Whipped cream for the complementing your dessert 🙂
Procedure:
- Preheat the oven to 180 degrees celsius.
- Melt away 60g butter.
- Mix up together 4 eggs, 110g regular and vanilla sugar for 3 minutes until you get a fluffy texture. Stir in flour and baking powder. Mix well. Pour in melted butter. Put your dough mixture into a springform. Let to bake golden brown for 30-35 degrees celsius in the oven.
- After that, let to cool down for 20 minutes at least.
- Meanwhile, squeeze 80ml of lemon juice into a small bowl. Make custard out of Custard powder, 25g sugar, 150ml full-fat milk, and 40ml lemon juice. When done, put into your custard 150g of plum jam and let to cool down for about 20 minutes.
- Mix in the rest of the butter /100g/ into the custard mixture and add the icing sugar.
- Cut the sponge cake into 4 (or 3 in my case) layers. Use the rest of lemon juice and soak the sponge layers. Afterward, put the good layer of the jam custard on all of the layers except the top one.
- Meltdown the white chocolate in a water bath. Add the 250g of mascarpone and mix well. Use the chocolate mixture to cover the cake all over.
Let the cake chill for about 3 hours.
