EASY ITALIAN LOW CARB CHICKEN BREASTS
I love italian food. Very much. There are days where I crave for my big fat italian pizza with loads of tomato sauce, mozzarella and fresh tomatoes on it. But. It is very true that sometimes can be italian food too greasy, heavy, or jus far too “unhealthy”. If you know what I mean. Hmmm. Solution? Easy italian low carb food? Instead of pizza? How can I substitute pizza for some kind of low carb dish? Mozarella, tomatoes… Does it sound too good to be true? Too crazy? Impossible? Utopic? I thought so too. But hey, we want to keep ourselves fit for the summer right? So here is the idea. To get as much flavour as possible, without as many calories and carbs as possible! The solution? Polo alla pizzaiola! Before I tried this heavenly chicken breasts for the first time, I didn’t know this combination! OMG. SOOOOO good. And light. Tasty. Full in flavour. Yummy. Creamy mozzarella in combination with hot tomato sauce on a crispy fried chicken breasts freshly covered in crispy breadcrumbs with touch of grated parmiggiano reggiano. Yes. And my all favourite thing about this dish is the easiness and speed of getting it ready to eat!!! Ready in 20 minutes. You think I am joking? Do you want to have a recipe? Or you just want to grab some greasy burger at the next door fast food stand? Really? Alright, so here it is!
INGREDIENTS:
4 | skinless boneless chicken breasts |
4 tablespoons | extra virgin olive oil |
2 | garlic cloves, finely chopped |
1 package | mozarella or scamorza |
few leaves | basil |
500g | polpa di pomodoro or chunky passata |
1 tablespoon | oregano leaves, roughly chopped |
100g | grated parmiggiano |
300g | breadcrumbs |
PROCESS:
First we prepare the sauce and keep it aside.
Heat some oil with a shelled garlic, as soon as the garlic is slightly browned, add the tomatoes/pomodoro, add salt and pepper, cover with a lid and cook for a few minutes over a not too high flame, if you use the puree, let it set.
Cut the mozzarella or scamorza cheese into slices.
Note: Always try to get the best quality meat. Like always! There is so much unhealthy and non-organic meat out there which is being mass-produced, where the animals were badly taken care of. You don’t want to support this market. That’s the reason you should always be conscious about your shopping choices. Also, I am sure you dont eat that often, so I think it is a good option to always buy the best meat quality as possible to enjoy your dish as much as it is possible. By supporting small local producers who care about their animals is surely best way to enjoy your food yet better.
Bash down your chicken breasts.Season each side of them with salt. Grate parmiggiano (parmesan cheese) and mix with breadcrumbs and flour. Pour the chicken breasts into scrumbled eggs. Take it out and cover with the breadcrumb mixture. Cover well.
Put some oil in a large pan and brown, remove the garlic and add the chicken slices, brown well on both sides, as soon as they are golden.
At this point, place some tomato sauce on a plate and put a slice of chicken onto it. Slice up the mozzarella and place on the top of the chicken. Cover with a lid for few minutes to let the mozarella melt a bit.
Serve immediately with a drizzle of cold oil and basil on the top
