SPELT APPLE TART A LA RAYMOND BLANC

Sometimes, mostly at the weekend, I feel like jumping out of the bed and make some delicious cake. But I mostly feel guilty when I am supposed to use lots of ordinary white flour and sugar. So I came up with this healthier version of my most favourite Apple cake of all times from my favourite chef Raymond blanc. Apple tart Maman blanc by Raymond blanc.

SPELT APPLE TART A LA RAYMOND BLANC

Preparation time: 35 min
Baking time:          45 min
Chilling time:        60 min
Serves:                   6 persons

Ingredients:

For the dough - short cut pastry:

250g spelt flour
125g soft butter
1 egg
pinch of sea salt
splash of water
1,5kg of apples (any - but better to get sweet-sour ones)

For the apple filling "brush" before going to the oven:

1,5 tsp of Cognac (didn´t have Calvados and worked well too)
15g butter
15g coconut flower sugar
1,5 tsp freshly squeezed lemon juice

For the custard:

100-150ml of single or double cream
50g coconut flower sugar
1 medium-size egg

Additional:

Butter for greasing your baking dish
A bit of flour for the surface when kneading the dough

Procedure:

  1. Mix together flour, butter, and a pinch of salt and put them into a food processor. After your mixture becomes a bit sandy, add 1 egg and splash of water. Mix well. Altogether about 3 minutes.
  2. After it is done, put the dough onto a lightly floured work surface where you knead the dough for about 30 seconds until nice and firm.
  3. Roll the dough out to get a nice flat-like form about 1cm thick.
  4. Put the dough in between two sheets of cling film. It will ease your further manipulation with the dough.
  5. Store the dough in a fridge for 30 minutes.
  6. After you took the dough out, take your apple tart baking dish, - I used the ceramic one.
  7. Roll the dough to 2 mm thickness.
  8. Then transfer the dough onto your baking tray/dish, which you do not forget to grease with butter beforehand.
  9. Cut off the excess pieces of the dough around the dish edges.
  10. Prick the dough with the fork.
  11. When done, prepare your "Apple brush".
  12. Melt your 15g butter in a saucepan with sugar and splash of lemon. Let the sugar dissolve.
  13. Set aside and pour in cognac (in better case you can use calvados).
  14. Peel the apples and slice them into chunks, similar size each. Arrange the apples all over your baking dish as you can see on a photo below.
  15. Brush the apples with your cognac mixture.
  16. Preheat your oven to 220 degrees of Celsius and let the cake bake for 10 minutes. After 10 minutes reduce the heat to 200 degrees and let the tart bake for another 20 minutes.
  17. Meanwhile, start making custard.
  18. Put double cream into a bowl, stir in 1 egg and 50 grams of coconut sugar.
  19. After 20 minutes of baking, you take out the tart and pour it in your custard mixture.
  20. Bake for another 10-15 minutes.
  21. After that - you should see how nicely set is your filling now.
  22. Take the tart out of the oven and let to cool down for at least 30 mins.
  23. Serve with whipped cream and vanilla ice cream on a side, if fancy.
